So i’m in the process of coming up with a menu for a Taco Bar BBQ this weekend.
I know I’ll be smoking a pork butt and that will end up being the meat for some smoky Carnitas tacos.
Next up are Fish Tacos… Not sure yet if I’ll be smoking the fish or just grilling it. Or perhaps both? Grill the fish and then leave it in the smoker to stay warm?
I’m making chipotle aioli, a smoked black salsa, mango-black bean salsa and a jalapeno cole slaw…
We’ll see how the shopping and prep work go this week!
